Ingredients:

  • 1 cup avocado oil (or mild olive oil)
  • 1 egg yolk (room temperature)
  • 1 tsp. dijon mustard
  • 1 tbsp. apple cider vinegar
  • ½ tsp. salt
  • ½ tsp. lemon juice

Preparation:

  1. In a bowl, mix together the egg yolk, mustard, vinegar and salt.
  2. Gradually pour in the oil in a thin stream, beating constantly with a whisk or blender.
  3. When the mixture thickens, add the lemon juice and stir.
  4. Pour into a glass jar and store in the refrigerator for up to a week.

Tip. If you want to increase the usefulness of this mayonnaise, then add a couple of spoons of MCT oil (if you do not have individual intolerance contraindications)

Vegan mayonnaise (without eggs)

Yes, don’t be surprised, but you can make mayonnaise without eggs. This recipe is completely plant-based, but that doesn’t stop it from being airy and delicious.

Ingredients:

  • ½ cup unsweetened soy milk (or aquafaba – the liquid from chickpeas)
  • 1 tsp. apple cider vinegar
  • 1 tsp. Dijon mustard
  • 1 cup of vegetable oil (sunflower or avocado oil is best)
  • ½ tsp. salt

Preparation:

  1. Blend the soy milk, vinegar, and mustard in a blender.
  2. Slowly add the oil, beating on low speed.
  3. Whisk until the mayonnaise thickens.
  4. Pour into a jar and store for up to a week.

Tip. Try substituting soy milk for cashew cream, especially if you have a good nut paste blender. You’ll get a richer texture that way.

The choice of oil is the key to perfect mayonnaise. It affects the flavor, texture and healthfulness of the finished product.

Avocado Oil

Avocado oil gives mayonnaise a delicate texture with no extra flavor and is rich in healthy fats. But you should choose quality cold-pressed oil to avoid bitter flavor.

  • Pros: neutral flavor, heart healthy fats, great with meats and salads

Olive oil 

First cold-pressed olive oil has a rich, slightly peppery flavor. But to avoid bitter mayonnaise, it’s best to mix it with a neutral oil, such as avocado oil.

  • 1/2 cup cold-pressed avocado oil

If you’re the lucky owner of a powerful Ninja blender, you don’t even need to slowly pour in the oil, it will do the job perfectly fine on its own in seconds. This method is especially good if you want a uniform, velvety consistency.

Ingredients:

  • 1 egg (room temperature)
  • 1 cup avocado oil
  • 1 tsp. apple cider vinegar
  • 1 tsp. Dijon mustard
  • ½ tsp. salt
  • ½ tsp. lemon juice

Preparation:

  1. In the bowl of a blender, add the egg, mustard, apple cider vinegar, lemon juice and salt.
  2. Pour in the avocado oil at once, you don’t need to pour it in slowly as in the classic method.
  3. Close the lid and turn the blender on high power for about 30 seconds.
  4. As soon as the mayonnaise thickens, pour it into a glass jar and put it away in the refrigerator.

Tip. If the mayonnaise turns out too runny, try adding another egg and whisking again. For a super-airy texture, you can use the “emulsifier” attachment available on some Ninja blenders.

Tip. If you are making a double batch at once, use a wide bowl and remember to scrape the mayonnaise off the walls of the bowl while whipping. One of the best mixers for such tasks is the KitchenAid with a metal bowl.
